Quinoa and Black Bean Stuffed Peppers

Ingredients:
- 4 bell peppers, tops cut off and seeds removed
- 1 cup cooked quinoa
- 1 cup black beans, drained and rinsed
- 1/2 cup diced tomatoes
- 1/2 cup corn kernels
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1/2 cup shredded low-fat cheese (optional)
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the quinoa, black beans, tomatoes, corn, cumin, paprika, salt, and pepper.
- Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
- Cover with foil and bake for 30 minutes.
- Remove foil, sprinkle with cheese (if using), and bake for another 10 minutes.
- Serve warm.
