Ingredients:

  • 4 bell peppers, tops cut off and seeds removed
  • 1 cup cooked quinoa
  • 1 cup black beans, drained and rinsed
  • 1/2 cup diced tomatoes
  • 1/2 cup corn kernels
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup shredded low-fat cheese (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the quinoa, black beans, tomatoes, corn, cumin, paprika, salt, and pepper.
  3. Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
  4. Cover with foil and bake for 30 minutes.
  5. Remove foil, sprinkle with cheese (if using), and bake for another 10 minutes.
  6. Serve warm.
