Zucchini Noodles with Pesto Sauce

Ingredients:

  • 2 medium zucchinis, spiralized into noodles
  • 1 cup fresh basil leaves
  • 1/4 cup pine nuts
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions:

  1. In a blender or food processor, combine basil, pine nuts, Parmesan, garlic, and olive oil. Blend until smooth to make pesto sauce.
  2. Heat a non-stick skillet over medium heat and sauté zucchini noodles for 2-3 minutes until slightly tender.
  3. Toss the zucchini noodles with the pesto sauce.
  4. Season with salt and pepper and serve immediately.
