Grilled Chicken and Vegetable Salad

Ingredients:
- 1 boneless, skinless chicken breast
- 1 cup mixed salad greens (spinach, arugula, kale)
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1 tbsp olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions:
- Season the chicken breast with salt, pepper, and a little olive oil.
- Grill the chicken until fully cooked, about 5-7 minutes per side. Let it rest, then slice.
- In a large bowl, mix the salad greens, tomatoes, cucumber, and red onion.
- Add the grilled chicken slices and drizzle with olive oil and lemon juice.
- Toss gently and serve.
