Ingredients:

  • 1 boneless, skinless chicken breast
  • 1 cup mixed salad greens (spinach, arugula, kale)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1 tbsp olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions:

  1. Season the chicken breast with salt, pepper, and a little olive oil.
  2. Grill the chicken until fully cooked, about 5-7 minutes per side. Let it rest, then slice.
  3. In a large bowl, mix the salad greens, tomatoes, cucumber, and red onion.
  4. Add the grilled chicken slices and drizzle with olive oil and lemon juice.
  5. Toss gently and serve.
